Choco/ Peanut Butter Cookie Sandwich

Ok so this recipe was so simple to make and so fun. It was a hit among us all and we can’t wait to have it again. If you love Reese’s then I think you should give this a try. I used creamy peanut butter, but want to try using crunchy (I prefer crunchy anyways lol).

A perfect combination of Reese’s and cookies. What else could you want?

Chocolate Cookie

  • 1 cup flour

  • 6-7 Tablespoons cocoa (I prefer dark cocoa but use whichever you want)

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon salt

  • 2/3 cup softened butter

  • 1 cup sugar (I use cane sugar but plain white works)

  • 1 large egg

  • 1-2 teaspoons vanilla (again go on your preference, I like to taste the vanilla so I put a little extra most of the time)

  • Peanut Butter Filling
  • 3/4 cup Peanut butter (either crunchy or creamy- if you like an extra peanut butter taste then you can add more we just want a thick yet spreadable filling)

  • 2-3 cups powdered sugar (you will eyeball this a little to maintain the consistency you want)

  • splash at a time of milk or whipping cream (this is in case your filling is too thick)

  • *optional*
  • vanilla (about a teaspoon, we don’t want to overpower the peanut butter)

  • butter (if you want to make it more like a buttercream frosting)

Cookie Directions

  • Preheat your oven to 350 degrees F.
  • Cream together your butter and sugar until mixed well. Add your egg and mix thoroughly.
  • Sift together your dry ingredients. Then add your dry mix to the wet mix a little at a time until all of it is mixed together completely.
  • Scoop out enough dough at a time to equal approximately 1 inch doughballs. Place them on a parchment lined cookie sheet.
  • Bake for 9-10 minutes (times may very depending on your oven). You want to make sure they are cooked but not crispy.
  • Promptly place them on a cooling rack and let them cool completely.
  • Filling Directions
  • Beat the peanut butter by itself for just a few minutes on low to allow it to spread out and become extra creamy (similar to the texture you get when creaming butter and sugar).
  • Add your powdered sugar starting with 1/2 cup and working your way up to the desired texture.
  • At this point you would add your extra milk/ cream or vanilla if you are choosing to.
  • You should end with a filling that is easily spreadable but hold firm peaks (think egg whites for meringue).
  • Assembly
  • When your cookies are completely cool (we don’t want our filling falling out), you can start assembling. To make it easier, I put my filling into a piping bag but you can use a ziplock with the corner cut, an ice cream scoop, a spoon, whatever you are comfortable with.
  • Start by taking one cookie in your hand with the flat side facing up. Take your filling and put enough to have a good amount in the cookie. I usually will go around in a swirl one time, starting on the edge and working to the center, with my piping bag and that seems to be plenty.
  • Next you take another cookie and lay it on the cookie you were just working with with the flat side against the filling. Keep working this until you have no more cookies, or no more filling.
  • Finally, enjoy your treat!

Notes

  • What I love about this is that it leaves the floor completely open to try new things. You could make a plain buttercream and make it mint for a cookie that is similar to a peppermint patty. You could add physical salted peanuts to it for an added crunch, giving you more texture. There are so many possibilities.

Thank you! They are so good and definitely a nice way to change up a dessert. They are something that you can easily change with other flavors or add things to them to make them more personalized as well.

Gotta love super simple recipes! These look like something that I could make and assemble with my son. He would love them!
