A twist on chicken salad

Do you like a little heat in your dishes? With us approaching summer here in the states, a lot of us are leaning towards dishes that are light and refreshing but fill us up.

I like to try new recipes whenever I can. We have regular dinners with my family so there are 5 people to try them on. This is really fun because all of us have slightly different preferences when it comes to our meals. It gives me honest feedback, allows me to allow for tweaks to the recipe to fit our preferences and to add more of a variety to our dinner lineup.

I had been wanting chicken salad and found this recipe for Cilantro Lime Chicken Salad on Pinterest. When I read the title, I had my doubts on how it was going to taste. The family is not a fan of cilantro in recipes, let alone when the recipe showcases it in the title. The pictures intrigued me so, why not, let’s try it.

Let me tell you….AMAZING! The whole family liked it which is a miracle in itself. The better part, there were no changes that needed to be made!

I marinated my chicken overnight in order to soak up every bit of marinade that I could. The recipe has you hold a little of the marinade aside to make the dressing, don’t forget to do this.

This salad has a southwestern style to it but with the refreshing crunch of the lettuce and corn kernels add for a cool break from the heat of the sauce.

While cooking the chicken, I like to prepare the other items, so I made my dressing, drained and rinsed my corn and black beans, and cut my tomatoes. To plate I did my bed of romaine, a little corn and beans, tomatoes, cheddar cheese, and topped it with chipotle and cheddar tortilla strips and the dressing. SO GOOD!

Lol same here! I love trying different salads and love it even more to find one that is filling as well as yummy.

It is amazing! Its great for warmer weather too. I think I will end up trying it on the grill to add a smokiness to it and seeing how it turns out.
